4-5 Pints of water
4 Vegetable stock cubes
4 Medium Onions
2-3 Leeks depending on size
6 Carrots
2 Parnsips
1 Sweet Potatoe
4 Potatoes (your favourite)
1 Swede
2 Turnips (if desired)
Salt n Pepper
2-3 Cloves of crushed garlic
1 Tub fresh single cream
Firsly add the water into a large enough pan, then add your stock and allow it to boil while you prepare the vegetables.
Peel, Chop and skin all the veg and then place it in the pan, add your salt, pepper and garlic and then bring to the boil.
Once it reaches the boil let it simmer for a few hours, i normaly let it go for around 2-3 hours untill everything is cooked
and tender. Then get another equaly large pan ready to transfer it to. Now spoon the mix veg and the juice into a blender and blend it all.
Adding it to the new pan as you go. Once its all blended and nice and smooth slowly add the cream and stir in slowly.
Add it back to the heat and let it simmer for a little longer, taking care to stir it and make sure it does not burn.
It should now be a beautifull orange colour and should taste amazing.
I usualy serve what is needed and then put a few tubs of it in the fridge and the rest in the freezer.
