Fried Rice - Japanese Style

- 2 Eggs beaten
- 1/2 Chicken breast chopped
- 2 Onions chopped
- 3 tbs Sesame oil
- 3 tbs Soy sauce
- 1/2 ts Garlic minced
- 1 tbs Mirin (available in many Asian food store, use 2ts of sugars otherwise)
- 1 ts Salt
- 3 Stalks celery chopped
- 1/2 Green bell pepper chopped
- 1/2 Small Carrot chopped
- 2 Green Onions chopped
- 4 C Rice (already cooked)

Before anything, make sure to use already cooked rice. Japanese rice works much better than American style rice. (I like to use Nishiki rice -- if you can't find it in the grocery store, check an Asian food store.) In this recipe, you are simply to add chicken, seasonings, and some vegetables to the rice you have already prepared.

First chop chicken into bite sized pieces. Put 1 tbs of sesame oil and and sprinkle of salt in a large frying pan, and heat it over medium heat. When pan is hot, add chicken and sautee. Add carrots and cook for 3 min with high heat. Add the rest of vegetables and continue to cook.

Add eggs and cook with 1 tbs of soy sauce. Just before eggs are done, add rice and the rest of sesame oil, 1 tbs of Mirin and soy sauce. Keep stirring while cooking till the color of onions becomes brown and carrots become tender.

This worked great! I added green peas too, and some leftover spinach. The spinach almost disappeared tho!
