Chicken Biryani

Ingredients:
Name Quantity
1. Chicken(preferably with bones) - 1 kg
2. Cinnamon sticks - 4 long nos
3. Fennel seeds - 2 tspns
4. Nutmeg - 1 big
5. Onions - 7 diced
6. Tomatoes - 3
7. Ginger garlic paste - 2 tspns
8. Coriander leaves - 1/2 bunch
9. Rice - 2 and 1/2 cups
10. Water - 1 litre
11. Salt - As per taste
12. Turmeric - 1tspn
13. Red chilli powder - 2 tspns
14. Cooking oil - 4 tspns
15. Curd - 1 1/2 cup
16. Chicken masala powder
(available in the market) - 2 tspns
17. black pepper whole - 5 to 6


Taste Powder :
Make a fine powder of cinnamon sticks, fennel seeds, nutmeg.

Marination for chicken:
Take curd in a bowl. Add salt, turmeric, ginger garlic paste, taste powder(given above), red chilli powder(1 tspn).put chicken
in the marinade and cover the chicken pieces nicely with the curd mixture.

Tomato paste: Keep the tomatoes in a oven proof dish with little water in it and place it in an oven, for 7 mins at 100 degc.
Later remove dish from the oven, remove the tomato skin and grind the tomatoes to a fine paste.

Method:
Heat oil in a deep pan. Add some cinnamon sticks and whole black pepper.
Heat till crackling sound emerges.
Now put the finely diced onions in the oil and fry till the onions become translucent and reddish brown in color.
Now add red chilli powder, chicken masala powder and stir nicely. Add the tomato paste prepared above. Stir the ingredients nicely.Finally add the chicken marinade to the pan and fry for some time. Keep the gas on medium flame. Cover the pan with a shallow lid, put one cup of water on the lid. Let the chicken boil till all the water on the lid evaporates. Switch off the gas once done.
Boil rice in a large vessel, the rice should be half - cooked.
Drain the rice and run cold water into the rice to bring it to room temperature.
Take a deep oven dish, grease it with some oil, now put all the chicken contents into the dish, put half of the finely chopped coriander leaves on the chicken, now put rice on the top of the chicken and put the other half of the coriander leaves on it.
Place the oven dish in the oven, for about 7-8 mins, at 100 degc.

Remove from the oven once done, and serve hot.
